I have noticed this with masesges sent from both my iPAD and HTC EVO (*gasp* not an iPhone4). I actually found this to be a problem when I needed to recover something. I had already deleted the original message from both my inbox and deleted folder. So I went to retrieve the information from the sent message and it was all in some garbage, techno code . Now, I have gotten into the habit of copying myself on anything important that I send from my iPad so I have a clean non-techno-code copy for reference.
